Every summer, I save a day or two to go home to Outlook to visit my mom, dad and our family dog Quinton. Outlook is a small town located an hour away from Saskatoon which makes day trips possible.
One of my favourite things to do when I get home is spend the afternoon in the kitchen with my mom (shocker!) Typically before I go home, my mom and I make a rough plan of what we want to try to make. Without fail, four days before I was scheduled to make the trek to Outlook, my mom and I made a plan to create something with peaches since she had bought a case. I was a little tired of pies and kept seeing pictures of beautiful galettes all over Instagram so we set our sights on that. My mom isn’t much of a rebel in the baking department and likes to follow recipes to a tee (which now that I think of it might be why her baking tends to turn out better than mine…) so we found this one from Everyday Dishes. We did everything the recipe said and it turned out perfectly.
Another recipe that we tried was a pasta and fried zucchini salad from Smitten Kitchen, based on Yotam Ottelenghi’s recipe from Plenty. I don’t have any of the Ottelenghi cookbooks but after trying this recipe I am thinking I will be purchasing some very soon. It was so flavourful and fresh, with zucchini, basil and parsley from the garden and we added shrimp to put our own little spin on it. So good!
