Here’s the perfect dessert for you or your friend who is vegan, gluten free, dairy free, vegetarian or has basically any food intolerance there is! This avocado pudding and chia parfait is also a great option for when you want a dessert that is a bit healthier, without compromising the flavour.
People are always raving about how healthy avocado pudding is but when I make it by itself, I have to keep in mind that a whole avocado is 250 calories! When the cocoa powder, honey and maple syrup are added, it makes for a pretty high calorie dessert. That’s why I like to add a chia seed pudding and some fresh fruit to balance it out. That way, I can eat a pretty big portion and not consume ~500 calories for a dessert that is supposed to be healthy.
Feel free to substitute other flavours of greek yogurt and fruit to make it your own.
Chia seed pudding
1 cup strawberry greek yogurt
1 cup almond milk
1/4 cup chia seeds
Mix all ingredients in a bowl. Cover and refrigerate for at least 2 hours.
2 ripe avocados
1/4 cup cocoa powder
3 tbsp. honey
3 tbsp. maple syrup
1/2 cup almond milk
1/2 tsp. good quality vanilla
Peel avocado and dice. Add all ingredients into a food processor and blend until smooth. Cover and refrigerate if you are not going to use it right away.
Divide chia seed pudding into 6 glass bowls or glasses. Top with pudding then strawberries. Serve immediately.
*To be fancy and have strawberries on the side of the dish, pour the chia seed pudding in the bowl then squish strawberries to the side of the dish. Pipe avocado pudding in.
