Sometimes I aimlessly wander around the grocery store looking for nothing in particular and yesterday was one of those days. This weekend was too busy to grocery shop so I went on a Monday night when the store was dead. I decided to take my time and see what new things were at Sobeys and when I was walking around the fruit section I found passionfruit! I fell in love with this little fruit when Trevor and I were in Panama, not for the actual taste but for the smell. It’s amazing.
So when I walked by one in the grocery store I had to buy it. I wasn’t sure what I was going to make with it but if all else failed, I would use the juice for a cocktail (passionfruit mojito anyone?). I had chia pudding on the mind though so I decided to make this pudding, which turned out so good. It definitely tastes like dessert with the pudding powder in it but could be eaten for breakfast or for a delicious snack.
Vanilla Passionfruit Chia Pudding
1/2 cup greek yogurt
3/4 cup almond milk
3 tbsp. vanilla pudding powder
2 tbsp. chia seed pudding
In a medium bowl, stir together everything except passionfruit and stir.
Cut passionfruit in half and put a fine meshed strainer over the medium bowl. Scoop insides of fruit into the strainer and gently push on seeds to release the juice through the strainer.
Stir the mixture together and place in refrigerator for at least 3 hours before eating.
Serve with fresh fruit or by itself. Eat within 2 days and store in refrigerator.
*If it’s too thick, add another tbsp. of almond milk until you reach the desired consistency that you like.
